Pork Schnitzel

Oktober fest, anyone? I love the schnitzel kit from Costco, which isn’t super high carb (16 g. per serving), but still too much for what I aim for per meal. This version is practically zero carbs! I serve this with mushroom gravy, green salad, and cheesy cauliflower (cauliflower “Kasespaetzle”).

  • 4 boneless pork loin chops
  • 2 eggs, whisked
  • 1/4 cup avocado oil, for frying
  • 1/2 cup Pork Panko (or pulverized pork rinds)
  • 2 Tbsp. grated parmesan (can leave out for dairy-free)
  • 2 Tbsp. nutritional yeast flakes
  • 1/4 tsp. black pepper
  • 1/2 tsp. ground mustard
  • 1/2 tsp. garlic powder
  • 1/2 tsp. paprika
  • zest from one lemon

Pound out each piece of pork to double the size, then cut in half. Mix all other ingredients, except eggs and oil, together in a shallow bowl. Heat oil in frying pan. Dredge each piece of pork in egg and then the panko mixture, Fry in pan for about 4 minutes on each side, until golden on the outside and cooked all the way through. Let rest on paper towel until ready to serve.
